The Family That Loses Together....

If you are a regular reader, you know I have been on this Weight Loss Journey for 18 months.  I have lost 110 lbs as of this morning's weigh in.  My family and friends have been incredibly supportive and motivating, especially my sister, Kari, and her husband, Josh.  Josh called me last weekend and had a great idea for us all to do this together.  By all, I mean him, my sister, my husband Roger and I.  Saturday we met at their house, I shared my knowledge, took measurements and got them all started on My Fitness Pal to begin tracking their calories.


I will let them introduce themselves:


My name is Joshua Bryant. I am 33 years old with three very active boys all under the age of 5. With a very busy and hectic lifestyle I've never put a big emphasis on my own health. I've always tried to put the health of my kids and my wife before me. As I now look at myself, I am starting to realize that I can't keep up with my children, I am always tired, and my body feels like it is falling part.  I decided to start this journey down the path of a healthier lifestyle.  Not to deprive myself of food, but to be more conscious of the food that I put in my body.  My goal for this journey is to lose about 50 pound. To get down to a healthy weight of 150.  I want to be able to run with out being out of breath within 2 minutes. To be able to enjoy my children as they grow up and to enjoy my grandchildren as they come along and to overall become a healthy and vibrant person once again.


Hello!  I am Kari (Josh's wife and Kristy's sister).  I stay at home with our 3 crazy young boys.  I also have a craft business I run from our home...oh and an accounting job I do one day a week.  To say my days are busy and hectic is a complete understatement!  Out of the four of us, I am probably the most apprehensive about this journey.  I understand the importance to get and stay healthy but struggle with finding the time and energy to make it a success.  This is why doing this as a family is so important. My goal is to be comfortable in my body, whatever weight that may be.


Hi.  My name is Roger.  Kristy and I have been married just over 11 years.  I've always been a big guy but fairly active.  My wife is a great cook and after we married, we just stopped paying attention to how much we were eating.  I have a physically demanding job, keeping me on my feet for 8 to 10 hours a day.  My goal is to be able to do my job the best I can, curb my sugar addiction and catch up with my wife.

Weight Loss Journey: What I Eat In A Day

After my last few blogs were pretty negative in tone, I thought I would brighten things up.  I started on a low dose thyroid medication on Saturday April 2nd.  That next week I dropped 5 lbs and then I put the scale away.  I didn't want to be checking it every single day.  I won't weigh in again until May 1st.  I am doing really well at keeping under 2,000 calories so I thought I would share with you all what I eat in a day.

BREAKFAST 8:00 am
Breakfast is the same every work day.  I make an egg scramble.  I meal prep the meat on Sunday and portion it out into 4 ozs or whatever the serving is.  I weigh everything out in order to track things accurately.  This keeps me full until around noon.  I also have a 24 oz coffee with almond milk (32 cals) and about 40 ozs of water.


142 grams Isernio's Chicken Breakfast Sausage (160 cals)
7 ozs sliced Zucchini (34 cals)
5 ozs sliced Button Mushrooms (30 cals)
8 ozs Liquid Eggs (123 cals)
Total:  347 Cals, 15 carbs, 6 fat and 37 protein

PRE-WORKOUT 12:00 pm
I try to keep pre-workout light but with some protein and carbs.  I have been really liking cottage cheese and berries.


8 oz Cottage Cheese (180 Cals)
3 ozs Black Berries (32 cals)
3 ozs Raspberries (17 cals)
Total:  229 Cals, 28 carbs, 6 fat and 25 protein

POST WORKOUT 2:45 pm
I use my lunch break to go to the gym.  I either do Cardio or weight lifting for 35 minutes, then come back to work and eat.  Post Workout is always a salad.

4 oz Boneless Skinless Chicken Thighs (166 cals)
2 tbsp Litehouse Opa Greek Yogurt Feta Dill Dressing (50 cals)
Total:  256 cals, 10 carbs, 15 fat and 23 protein

Dinner can vary but we stick to about 10 or 15 dishes pretty consistently.   Here are a few.



6 oz Beef Chuck Steak (240 cals)
150 grams Yukon Gold Potato (120 cals)
2 cups Spring Salad Mix (20 cals)
2 tbsp Litehouse Opa Greek Yogurt Feta Dill Dressing (50 cals)
Totals:  430 cals, 32 carbs, 14 fat and 41 protein



Enchilada Filling:  20 oz Boneless Skinless Chicken Breast, 1 can of Low Sodium Black Beans, 1 large can of La Victoria Mild Red Enchilada Sauce.  Makes 10 Servings, 168 calories each.
3 La Tortilla Factory Low Carb Tortillas (80 cals each)
1.5 oz Mexican Cheese Blend
Totals:  745 cals, 87 carbs, 26 fat and 78 protein


7 ozs Boneless Skinless Chicken Thigh (245 cals)
8 ozs Yukon Gold Potato (138 cals)
6 ozs Birdseye Steamfresh Broccoli (60 cals)
Totals:  443 cals, 38 carbs, 11 fat and 46 protein


Beef Enchilada Bake
16 oz Grassfed Extra Lean Ground Beef
2 cups Instant White Rice
1 can Sweet Corn
1 can Low Sodium Black Beans
1 large can Enchilada Sauce
8 ozs Mexican Cheese Blend
Makes 4 large servings.  Can serve on a tortilla or eat in a bowl.
662 cals, 74 carbs, 18 fat and 51 protein


We also go out to eat maybe once or twice a month.  The above meal is from Ichi Teriyaki here in Longview.  I get no sauce on my chicken to keep the calories in check.  I look at MyFitnessPal for close matches when I eat out.  This meal came out to be 603 calories, 38 carbs, 16 fat and 68 protein.

In the evening I can have anywhere from 100 to 500 calories left.  I like to indulge in ice cream, popcorn or other simple snacks.  I found a really good diet ice cream called Halo Top.  It is hard to find and a bit expensive but well worth the effort.  The pint below is only 280 calories for the entire thing.  There is 60 carbs, 8 fat and 24 protein.  Compare that to regular ice cream and you will be blown away!

Weight Loss Journey: The Test Results Are In

I saw the Nutritionist last week and I did not get the results I had hoped for.  She said my logs looked good, I was doing everything right, and I just needed to work harder.  Lower my calories and burn more at the gym.  Let me tell you, I was really mad when I left.  I was depressed and pissed off.  I went to Taco Bell to drown my sorrows in Cheesy Frito Burritos.  After talking to my Mom and my husband, I calmed a bit but decided to make that day a cheat day and had pizza (Chicken and Spinach) for dinner.


I spent Friday thinking about what I needed to do.  I got a call from my doctor and she wanted me to come in to have some blood work done to check my vitamin levels.  I decided I was going to follow the nutritionist's advice for 4 weeks.  I would cut my calories to 2000 a day and change up my work outs to see what the results would be.  This requires planning and strategy.  I spent Friday evening writing up options for meals and making a shopping list.


Since Easter was Sunday, we did our weekly shopping on Saturday morning.  Do you have Cash & Carry where you are?  If so, check them out.  I find their produce selection to be top notch.  I can get my salad mix for $6 and it will last 2 weeks.  I also get mushrooms, zucchini, spinach, broccoli slaw, grape tomatoes, potatoes, diced ham and feta cheese.  It saves me money and helps with meal prep.  I spent a few hours Sunday night cutting veggies and weighing everything out.


Planning gives me the chance to try out a few new recipes too.  This week I made Zoodles with Shrimp and One Pot Chili Pasta (see recipes below).  I have to thank my husband for being so patient and open minded on weeks like this.  Let's just say I have been a little crazy about this and analyzing things even more than usual.  He was not a huge fan of the Pasta Chili.  He hates tomatoes, but he ate it anyway.  He did like the Zoodles and Shrimp.  I was surprised how much like pasta it actually felt.


I try to eat 4 times a day.  Breakfast, Pre-Workout Snack, Lunch Post-Workout and Dinner.  This week I have added in a few more supplements.  A ProBiotic, a calcium chew, a milder iron supplement, a chewy daily vitamin and a pre-workout energy mix.  This is in addition to my B12, D3 and Alpha Lipoic Acid.  They are working because some of my blood work has come back and my Vitamin D Levels went from 15 to 38 (normal is 20-80) and my B12 levels went from 230 to 588 (normal 200-914).  My Ferritin levels, which measure your bodies ability to hold onto iron, have went from 22 to 32 in a year.  Normal range for that is 11-307.  


Along with those good results have come some questionable ones.  My TSH or Thyroid Stimulating Hormone came back at 3.24 which is right in the middle of the 0.34 to 5.60 range.  However, my T3 which is part of the thyroid system came back at 82 which is lower than the 87-178 range.  Also my urine test showed more protein that normal.  My number was 147 and the range should be less than 29.  This is the test that worries me.  It shows kidney damage and possible kidney disease.


As of right now, I feel like I am fighting with my body.  According to the doctors and all my research, I am doing everything right.  I am eating very healthy, keeping active, keeping low carb, getting plenty of water and taking all my vitamins.  This week I have been keeping under 2000 calories a day and working out.  On Monday morning I was 397.6 but Friday morning I was 399.6.  Can you see why I am super frustrated?  I have been working hard, cutting and I gained weight.  Needless to say, I am waiting to hear from my doctor to see what to do.  I was in tears all Friday morning.  My Mom finally calmed me down and told me I should stop dieting for a week because me being so stressed and upset just isn't worth it.  I am so happy with my progress and how I feel but I am also so depressed.

Weight Loss Journey: Food Addiction and Obsession

This was a facebook thing but I thought it was so fitting.

I think I have always been a food addict.  Always thinking about what I could be eating.  Thinking about Lunch as I am finishing Breakfast.  Hiding snacks in my bedroom.  Hiding the evidence of what I had eaten.  It's a shameful thing.  I did my best to hide it in my teens and 20s but it was obvious I was gaining weight.

"A food addiction or eating addiction is a behavioral addiction that is characterized by the compulsive consumption of palatable (i.e., high fat and high sugar) foods – the types of food which markedly activate the reward system in humans and other animals – despite adverse consequences."

The thing about food addiction is that you can't live without it.  You can't just stay away from food.  It is essential to your survival.  Alcoholics can avoid alcohol, and situations involving it.  Food addicts can avoid restaurants but you have to eat.  And in my family, food seems to always be the way we get together.  Birthdays, Christmas, Easter, it doesn't matter, we are having a meal.  My first question is always, what are we having and what can I bring.

Have you ever sat down to watch a movie or tv with a bag of chips or cookies and suddenly realized that you have eaten the entire bag?  That was me all the time.  And in College, I had an hour break between work and class.  I would always spend that hour eating a bag of fast food while studying or finishing homework,.  I was spending $10 to $20 a day on fast food.  That habit continued into adulthood.

When I had Gastric Bypass in 2003, I thought I had broken that cycle.  I was determined that this physical change I had made in my body would cure my mental illness.  But, it was only a matter of time before my addiction took over again.  18 months ago, I was back in the cycle pretty hard.  Buying breakfast and lunch everyday.  Spending every extra cent on snacks and junk food.  I was drinking liters of Diet Coke daily.  I thought everything was great, but don't all addicts?

When I finally decided I had to change my life, it was my head that changed.  I had been to therapy, read every bit of research I could, tried every diet, and every pill.  Nothing worked until my brain changed.  I've dropped 105 lbs in the last 15 months.  But now my addiction has switched to a Diet Obsession.

I count every calorie of everything that goes into my mouth.  I log it on MyFitnessPal and use my FitBit to keep track of my calories burned vs my calories ingested.  I watch YouTube videos on diets, weight lifting and calorie counting.  I plan my meals out a week in advance and eat the same exact thing for Breakfast, Lunch and Post-Workout, every day of the work week.  It's a numbers game and it's driving me insane.

Typical Dinner in my house includes a baked potato with a little cheese, chicken breast and green beans, along with a glass of V8 juice.

Since October 1st, nearly 6 months, I have only dropped 10 lbs.  I've been on this giant plateau where I have tried so many changes.  I've dropped my calories, upped my workouts, used some supplements and now I have added in a protein shake.  I am burning 3500 calories and ingesting about 2000.  This leaves me a 1500 calorie deficit and over a week, that equals a 10500 calorie deficit.  A pound is equal to 3500 calories, therefore, I should be losing around 3 lbs a week.  So what the heck is the problem here?

Two typical days for me.  Around 5000 steps, 4000 calories burned and a work out tracked.

I go to a nutritionist on Thursday this week but in the mean time, I am completely freaking out over this stuff.  Constantly talking about it with my husband and trying to do research on what I am doing wrong.  Is it a thyroid issue?  Have I done metabolic damage to myself?  Am I destined to be this weight?  Am I gaining muscle instead?  It is on my mind at all times and has seriously become an obsession/addiction.  Maybe I will never recover from this.

Weight Loss Journey: My 10 Tips For Weight Loss

I have been at this for almost a year now and have had great personal success.  I can't even complain.  It has been relatively easy for me to make these changes.  Yes, there have been struggles and set backs but I have never let it completely take me down.  In no way have I or my journey been perfect.  I just want to encourage people while I am changing my life.

I have had many people ask me for help and want me to tell them how they too can be successful.  I honestly can't give advice.  There is no magic formula, no pill, shake, meal plan or hypnosis that will work.  You can want to lose weight, and try, but if you are not in it wholeheartedly, you won't succeed.  Losing weight is basically a math problem.  You have to burn more calories than you intake.

Here is what I did:
#1 - Made a mental change.  A switch flipped in my head.  Your brain, stomach and heart all have to agree on this change.  They may fight at times but as long as you stay strong, they will all come together.

#2 - Deleted soda and all other sweet drinks from my life.  I was drinking about a liter of Diet Coke per day, along with at least 1 coffee drink.  A Venti quad shot white chocolate peppermint mocha has 660 calories.  Not to mention the amount of sugar and fat.  While I haven't given up coffee completely, I have changed the way I drink it.  The same goes for soda.  I still have the occasional Diet Coke.  But I limit it to one.

#3 - Kept a food journal.  I use MyFitnessPal to track everything I eat.  You can customize your settings or it can help you find ones right for you.  It has an extensive library of foods.  You can even input recipes and exercise.  I keep track of EVERYTHING that I eat.  You can't think,"Oh, it's just a mini-snickers or a small bag of chips".  It all counts.

#4 - Stopped eating fast food.  There is an occasional trip thru the drive thru but mostly I avoid it all together.  There are too many temptations and hidden calories.

#5 - Also dropped 90% of the dairy and carbs from my diet.  I will still eat small amounts of each but mostly, they are both out of my life.  Both made me feel sluggish and lethargic.  If you feel like that a lot, take a look at your plate.

#6 - Meal Prep.  I think meal prep is probably the most important part of this.  I have talked about it a few times.  Take a few moments on the weekend, sit down and make your weekly menu.  Plan breakfasts, lunches, dinners and snacks.  Then go get groceries.  Prep your meats and your veggies when you get home.  If your food is readily available, you will be less tempted to stray from your plan.

#7 - I took it easy on myself.  Not every day is perfect.  You won't eat great all the time but that doesn't mean you ruined it.  I've heard the analogy that if you got a flat tire, you wouldn't slash the other three.  You fix the tire and get back on the road.  I took it one step at a time.  Got my food schedule down and then added exercise, then personal reflection.  Don't jump in the pool with your clothes on.  Take it easy.

#8 - I found support.  Not only are all my friends and family on Facebook and huge support system but I have joined some chat groups and websites where there are people on the same journey as me.  We can commiserate and cheer each other on from opposite sides of the oceans.

#9 - Took my mental temperature.  Throughout this entire process, I have been checking in with myself, mentally.  As you are changing your outward appearance, you inner self is also changing.  You have to adjust to your clothes fitting differently, your self image changing and your self esteem changing.  I hated looking at myself in the mirror and taking photos before.  I now love it.  Although I am not to my goal weight yet, I have such a different view of my body as a whole.  I am healthier than I have been since my teens.

#10 - I got up and got out.  After I got my food in check, I started moving.  At first, I just started walking.  I could only go a few minutes without stopping.  Now, I can do 10 straight minutes without having to stop, due to the pain in my foot.  I am far stronger that I was.

I hope some of these tips helped.  No every person loses weight the same so what works for me, may not work for you.  Tread your own weight loss path.  But never give up.

Weight Loss Journey: Nephew Adventures, Gym Etiquette and Meal Prep

A few weekends ago we had my nephew Logan over.  He is almost 5 and really energetic.  We decided to surprise him and take him to the beach on Saturday.  He had so much fun playing in the sand and at the playground we found.  He and I even walked through the Battery at Fort Columbia.  My only problem was he kept running off from me and it was freaking me out.  I am not up to 5 year old speed yet.


At the park, I decided to see if my skills were still up to par.  Nope!  I realized I could not hang for any more than a few seconds.  So I set a goal for myself to be able to do Monkey Bars again at some point.  I did climb the large toy in the center of the playground.  And while I was too afraid to do much else, it felt great to be up there.  I also clocked in 8 flights of stairs on my FitBit by going up and down.  If you think, because you are a Mom, you don't have time for a workout, you are wrong.  Just get out there and play with the kids.  Plus, swinging is so much fun!


I have been at Planet Fitness for 4 months now and have made a few observations I would like to share.  These are not be being judgmental, just things I see:
#1 - Get off your phone while you are working out.  Leave your phone in your locker and enjoy your workout.  I see people sitting on machines, texting or even talking.  It's rude to other people in the gym and there is no way you are focusing on your workout.
#2 - Light gray yoga pants are not a smart choice.  Just an observation but when you sweat, that color yoga pants changes color.  I felt bad for one woman.  It looked like she had wet herself.
#3 -  Make friends.  If, like me, you go to the gym at a certain time every day, it is likely that you see some of the same people.  Say hi, smile, be friendly.  You are both there for the same reason.


Through this journey I have spent many Sundays meal prepping.  Honestly, the biggest plus is that I can sleep in a bit.  My most recent set of prep included roasted vegetables (carrots, zucchini and broccoli), boiled chicken and quinoa.  I prefer to eat this kind of food for breakfast, having a morning snack at 11 and then lunch at 2:30 after my workout.  This particular week, my 11 am snack was the Kale Power Salad that I have talked about before and my 2:30 salad of greens, ground turkey and feta.  After the first day, I decided to modify the base meal and have a hot breakfast.


Here is exactly what was in each day's meal:
1.25 cups Roasted Vegetables, 1 cup boiled chicken thighs, 1 cup cooked quinoa (480 calories)
Day 1:  No Modification
Day 2:  Add 2 over easy eggs (add 147 calories)
Day 3:  Add 1 cup chicken stock (add 80 calories)
Day 4:  Add 1/2 cup egg substitute (add 62 calories)
Day 5:  Add 1/4 cup egg substitute and 1/4 cup mozzarella cheese (add 101 calories)
It was so good, healthy and filling.


From July 15th to August 15th, I only lost 6 lbs.  It was a rough month.  My weight loss has definitely slowed down.  In fact, I had not gained but I hadn't lost in over 2 weeks.  I did some research online, asked my fellow Blog to Lose ladies and contacted my nutritionist.  It turns out I haven't been eating enough.  I had been sticking to about 1800 calories and burning about 3800 in a day.  Well, that had slowed my metabolism and put my body into starvation mode.  So after talking to a few people, I upped my calories to 2300 to 2500 as my target.  After 2 days, I lost 3 lbs in 3 days.    I had just reset my body and my total loss is 87 lbs.  I am just 13 lbs from my 100 lb goal and 16 lbs from being under 400 lbs.

Weight Loss Journey: Coffee Epiphany, New Family Member and Meal Prep

When I started this journey, I immediately cut out every beverage but water and the occasional alcoholic drink.  This means I gave up my beloved coffee.  I gave up coffee because I can't drink it without cream and sugar and those can add a lot of calories.  Well, it dawned on me this week that I could add Vanilla Almond Milk.  I always have it on hand and it's only 20 calories for 1/4 of a cup.  So, I headed to Starbucks, my guiltiest of pleasures, and ordered a Venti Cold Brew Iced Coffee, black.  I had to sip a bit out, which was pretty bitter but gave me a jolt and then added in my Almond Milk.  I'm pretty sure I heard angels singing, but Miranda Lambert was also on the radio so I can't be sure.  It was glorious, delicious and my new favorite thing.  And it's only 45 calories.  Score!


My first day at the gym I decided the treadmill would be my safest bet.  I got on, situated myself and started the machine.  I started slow, at a 1 and then got it up to a 1.5.  I lasted 5 minutes.  And I was huffing after that five minutes.  Since then, I hadn't touched one.  That was almost 3 months ago, so last Tuesday I decided to give it another go.  I set my pace at 2 and was doing well, so I upped it to 2.5.  I ended up doing a total of 20 minutes, or 3/4 of a mile.  It was a real triumph for me.  After my treadmill, I got on the stationary bike and did 10 minutes, 4 of them at 90 rpms.  That 30 minute workout helped me burn 439 calories.  I did skip the gym Thursday and Friday though.  I had a really rough period this month.  I read a few places that exercising helps ease cramps and bleeding.  LIES I tell you....ALL LIES.


While perusing the inter webs, I came across an advertisement for the Kelso Longview Chamber of Commerce Color Dash.  It's a 5K event around the Three Rivers Mall that includes 4 color stations.  In no way am I ready for this kind of event but it got me thinking.  If I was going to do something like that, why not be a fun one like a color run?  Now, a 5K is just over 3 miles.  At my current pace, it would take me about 90 minutes.  My goal would be under 45 minutes.  That still is a pretty slow pace but I have about a year to work up to it.  Have any of you done a 5K or more?  How did you prepare?


We have a new addition to our Pink Elephant family.  My sister Kari had her third son on July 7th.  Leo Christopher weighed in at 10 lbs. 6 ozs. and was 22" long.  He is gorgeous, as were her other two.  I am especially excited about his birth date though.   My birthday is 5/5, Kari's is 9/9 so he fits right in the middle with 7/7.  Our friend Hollie and I threw her a Sip n' See on Saturday so family and friends could come over to the house and meet Leo without overwhelming them in the hospital.  As per usual, I made way too much food, but it was a nice relaxing afternoon with my favorite people.


After having intense period cravings, eating more than I should have and being in so much pain that I was barely able to function, I did manage to lose another 3 lbs.  I am down a total of 78, with 22 to go until my next major goal.  I have had a few people ask me how I am doing it and again I will say it is all in the mind and preparation.  I spend about an hour on Sundays prepping for the week.  This prep includes making a menu, making my shopping list and cooking anything that is needed.  This week, I didn't go shopping so I am eating out of my freezer.  I cooked up some turkey breakfast sausage for burritos and some chicken breast for salads.  Trust me, the time you spend prepping will save you three-fold during the week.  There is no, "I don't know what to make, what do you want?"  It's all laid out.  You know your schedule, if you are going to be home later one night, put something in the crock pot.  There are no excuses.  Dinner can take less than 15 minutes on most nights.

Weight Loss Journey: More Zaycon, Father's Day and Eating Mistakes

The chicken comes in a large box, separated into 4 -10 lb bags.  The breasts are connected.  I quickly trim them and put 2 breasts per bag.  Each breast half weighs, on average, about a lb.

I want to warn you about reading labels.  I had bought some ground turkey, thinking, it must be better for me than ground beef.  After reading the labels, I found that the turkey have more calories and fat per serving than the 93/7 Zaycon Ground Beef.  I did find some 99% fat free ground turkey.  It's a bit expensive, $5.99/lb, but it works really well on salads.  I put about 4 ounces on a salad so it lasts 4 days.

For Father's Day, we went and hung out with my Dad at the river.  It was such a gorgeous day.  We had a BBQ and I brought this really yummy dessert.  I had frozen a bunch of strawberries after we got a flat earlier in the month.  I took 4 cups of those and put them in a greased 10x13 cake pan.  Then I sprinkled a box of yellow cake mix over the top of them.  After that, I shredded a frozen stick of butter over the entire thing.  I put it in the oven for 15 minutes at 350, then took it out and made sure all the cake mix was moist.  I baked it for another 30 minutes and it came out golden brown and delicious.  For 8 servings, its 428 calories each.

A few Fridays back, I woke up with a killer headache so I decided to stay home from work.  I got up early anyway and cleaned the house up.  Around 11, Roger texted me and suggested I take my Suburban in to Les Schwab to have it checked out.  After 2 hours, and a walk over to Fred Meyer, The conclusion was that I needed a new front hub and my tires were separating.  The tires are under warranty at Wal-Mart so my next trip was to them.  I dropped off my vehicle and walked around the store for an hour before I went back to the Tire Lube Express.  The guy came out and told me he couldn't find any leak in my tires.  Well, that wasn't why I brought it in so I sent him back to check out the real problem I brought it in for.  Turns out my tires were out of balance.  They fixed it, at no cost but I was there for 2 hours.  So my final stop for the day was to our friend Al's Auto.  He quickly changed my hub and did an oil change.  I was so grateful not to have to sit around much longer.  He had it all done in an hour.


Now that the long part of the story is over, I can tell you what I did wrong.  My first mistake was that I hadn't ate breakfast.  So I had a bag of popcorn at Les Schwab.  While at Fred Meyer, I grabbed 2 bags of chips.  I was tempted by the candy bars at the check out but I restrained.  If I had been smart, I would have just walked over to the Grocery section and grabbed something healthy, but I wasn't.  I ate one bag at Les Schwab and then didn't touch the other until I was at Al's, 3 hours later.  I also had a Diet Coke and a Diet Pepsi.  Again, I should have made smarter choices, but these things happen.  I guess my point is, don't let slip ups get you down.


I have been doing really well though.  I am eating good, sleeping better and feeling better.  I am able to do things at the gym that I wasn't able to do before.  My FitBit is awesome.  I find myself trying to beat my previous days or set a new record.  My cousin called me a few days ago to ask me how I had changed things and what I had done.  She needs to lower her blood sugars.  I explained what I had done but I told her, in the end, it's all a mind game.  And I am serious about that.  It's all in your head.  I have a constant inner dialogue about not eating a certain way, pushing 2 more minutes on the stationary bike, 3 more reps, or get off your butt and clean up from dinner.  Anyone who has tried to lose weight can tell you that once it clicked, it was easy.  You can think you are ready a million times but when you are truly ready, you will know it and feel it.

Weight Loss Journey: Eating Out, Failure and a Progress Photo

My updates will be every two weeks, unless something super duper awesome happens.  I have got this down to a set routine now so not much changes.  I do meal prep on Sundays and take meat out of the freezer for the week.  I wanted to show you all this progress photo.  I was hanging out with a friend I hadn't seen in a while and he pointed out that he could really tell my progress from my face. I see myself every day so I didn't see it until I put these two photos side by side.   The first one is from about a year ago and the other is from a few weeks ago.


We have made a few extra trips north in the past two weeks so some of our meals have been eaten out.  I have talked about this before but you just have to be smart and not afraid to ask for what you want.  Below is an example meal from Wendy's.  It rings in at 415 calories.  It's an Asiago Ranch Chicken club with no bun and no sauce with a small chili.  Wendy's chicken is by far the best fast food chicken around.  It is an actual chicken breast, not a patty of ground up chicken with extra crap.


Last week, my weigh in was a tad disappointing.  Not sure what I did wrong but I was up 3 pounds.  And of course, I got a little depressed because I have been working really hard.  So Friday, I bumped my food intake down and my workout up.  Saturday's weigh in had me down 2 lbs but still more than last week.  We went to the Packwood Flea Market with my sister and her family on Saturday.  We had McDonald's on the way up, Mexican for a late Lunch.  Then we just snacked after we got home.  We did walk a total of 2.84 miles according to the fitness tracker on my husband's phone.


I've discovered that at my gym, in the locker room, when I take off my shirt to change, it signals the older women to start a conversation with me.  I've heard stories about diabetes, cheating husbands, the woes of retirement and weight loss.  I don't know why but my husband and I collect weird.  We must look approachable.  I was really proud of myself this week.  When I was doing the 30 minutes express last week, I actually used the steps.  My knees were really sore but I did it.  That was a huge achievement for me.  The photo below shows what the 30 Minute Express room looks like.  Another achievement was that I lost 16 lbs this month.  I am down a total of 69 lbs.  I had challenged myself to lose 15 lbs this month.  I think that is why I got so depressed last week when I was up.


I wanted to share a recipe that I tried this week.  It was my friend Jamie's birthday and she is allergic to gluten, soy and dairy.  Needless to say, a traditional cake was something she couldn't have.  I searched high and low for a good recipe for her.  I found this Lemon Drizzle Chickpea Cake.  The only cages I made were that I made a glaze of lemon juice and powdered sugar instead of the honey and I put raspberries on top.  The texture will not be for everyone but my husband and I both really liked it.  The lemon flavor is really pronounced.  Let me know if you give it a try.

March Goals - Week 1

It's the first of March and I am heading into another chapter on my journey.  I set myself a goal to plan and make nearly all of our meals for the week.  My plan was to spend some time Sunday morning making a menu.  Then, from that, I could make my shopping list and head to the store.  Well, I was woken up Sunday and had less than 30 minutes to shower and get dressed for breakfast so my plan went out the window.  No problem though.  I had a general idea of what I needed to buy so we went shopping anyway.  I discovered a lot of stuff in the WinCo bulk section so we may start shopping there again.  (We had a bad experience with some rotten chicken there and it really turned us off.)

As you can see, I haven't assigned days for anything.  It helps me to have a general plan but some days I come home and really just don't feel like cooking.  This week, my easy, minimal cooking meals are Chicken Quesadillas and Steak with Roasted Veggies.  I have all the  ingredients on hand for all of these dishes so it makes my week easy.

Monday
Last night I made us each a jar of Blueberry Overnight Oats for breakfast.  They really were delicious.  I will include the recipe for them below.  For lunch I had my normal salad with chicken, carrots and cherry tomatoes.  When I got home, I gave Roger the option of what he wanted for dinner and he chose Chicken Quesdaillas.  He loves them.  To save myself from all the carbs I did open face ones for me.  Cherry tomatoes, chicken and a little cheese on a crispy tortilla was almost like pizza!


Tuesday
Another new breakfast item for us today.  I whipped up some Healthy Breakfast Muffins last night.  They are packed with goodness including banana, carrot, oat bran and oatmeal.  (Recipe below)  I brought 2 for breakfast and then had a salad for lunch.  Today I didn't add any meat so that I could use the leftover chicken I had for dinner.  I mentioned to my sister, that I was going meatless today, and her question was, "How are you getting protein?"  I never even thought about that.  Luckily, I had a Special K Protein Bar in my desk.  Tonight I am making Creamy Chicken Quinoa and Broccoli Casserole.(Recipe below)  It's one of my favorites.


Wednesday
Last week, after my plateau, I reset my parameters on MyFitnessPal.com.  I brought my calories down from 2500 to 2000.  Monday of this week, I had 1536 and yesterday I ended with 1153.  A good thing about making dinner at home is that I control the ingredients, but my favorite thing is the leftovers.  I am not a huge breakfast fan.  I don't like waffles, pancakes, cereal or french toast so leftovers for breakfast are perfect for me.  My salad today is sans meat but I included some bocconcini (fresh mozzarella balls) for protein.  Dinner tonight is another new recipe, Lime Cilantro Chicken Thighs.  I will probably serve it with roasted vegetables.  I am really getting into cooking again this week, which makes me happy.

Thursday
Another day of Overnight Oats and Mozzarella Salad.  The Cilantro Lime Chicken turned out ok last night but I wish there was a bit more flavor.  The lime came through but I wanted more salt or spice.  Going to have to rework that recipe before I share it.  Roger is begging for something that isn't chicken so tonight I planned on Steak and Roasted Broccoli.  However, I forgot to take steaks out of the freezer so I suggested Shrimp Stir-Fry.  Well, Roger said he was tired of vegetables so he said he would make his own dinner.  I had Stir-Fry with Quinoa and it was delicious.

Today was a rough day.  I had my Oatmeal at 7 but I was so hungry that I ended up eating my salad at 10.  That left me with only a protein bar to last me until 5 when I would have dinner.  I ate it around 1 and was fine until I got home for dinner.  I don't know why I felt so hungry.  Yesterday I was pretty hungry when I got home but my daily calorie intake was 1598.  Tonight after dinner I am up to 1386.  I will probably have popcorn later tonight.  I find it to be really filling for very few calories.

Friday
I think I figured out my hunger problem the last few days.  Besides the Chicken on Wednesday, I haven't been getting enough protein.  Tuesday I had less than half of my daily intake, I was about 25% low Wednesday and 40% low yesterday.  To combat this, I got up this morning and made myself a quick breakfast wrap with a low carb tortilla, an egg and some crumbled bacon.  It got me 24 grams of protein and only 11 carbs.  I ate that at 6:15 and then my oatmeal at 8:15.  I had a garbanzo bean, mozzarella and tomato salad for lunch and then for snack tonight.  I made Steak and Roasted Broccoli for dinner before Roger left for his Poker game.  I spent the remainder of the night cleaning out my office/craft room.


Saturday
I was in full Spring Cleaning mode today.  I woke up at 7:30 and cleaned until 4 when Roger got home from the auction.  I literally went through every scrap of paper and piece of clothing.  I got through the office/craft room, the bedroom and 3/4 of the way through the cat/storage room.  I didn't eat all day so I rewarded myself with Pizza, finally.  I limited myself to the wings and 2 slices of pizza for a total of 1228 calories.  While this isn't the best idea, I am ok with the decision. I got a lot done and I got to indulge a little.

I honestly don't know where all the energy came from.  Let's be honest, you don't get to be my size by being active.  I live a very sedentary lifestyle but I just couldn't stop today.  Every time I sat for a few minutes I had to get back up and keep moving.  My body wouldn't let me rest.  I am sure I will pay for it tomorrow.  I hope this is a positive side effect of my new lifestyle.

I think I did pretty well on my week one goal.  I basically stuck to making dinner every night and I had lunch and breakfast everyday.  I hadn't really thought at all about my week two goal until I sat down to write this tonight (7:45 on Saturday night).  I think this week I want to focus on fitness.  My goal is to do 3 different types of exercises at least 3 days this week.

Blueberry Overnight Oats
1/2 cup Oats
1/2 cup Vanilla Almond Milk
1 container of Blueberry flavored Greek Yogurt
1 tbsp Vanilla Pudding Mix (dry)
Calories: 301   Fat: 4g    Carbs:  50g   Protein: 17g
Put the oats and pudding mix in first, then the yogurt and finally the milk.  Put the lid on and shake until combined.  Leave in the fridge overnight.  You can heat it up in the morning but I prefer it cold.
*You can add fresh fruit if you desire.  The flavors can be changed out depending on the yogurt or pudding mix you choose.

Healthy Breakfast Muffins
1-1/4 cups Oat Bran
1 cup Rolled Oats
1/2 tsp Baking Soda
1/2 tsp Baking Powder
1/2 tsp Salt
1/2 cup Brown Sugar
1 Banana, mashed
1 Egg
1/3 cup Vanilla Almond Milk
3 tbsp Light Olive Oil
1-1/2 cups Shredded Carrot
Yields 12
Calories: 128   Fat: 5g    Carbs:  22g   Protein: 3g
Mix mashed banana, almond milk, oilive oil and egg in a bowl.  Add in the brown sugar and mix until well combined.  Add in the oat bran, oats, baking soda, baking powder and salt.  Fold together until fully incorporated.  Then add the carrots and distribute them throughout the batter.  Spoon the batter into a 12 cavity muffin pan and bake at 400 for 22-25 minutes.
*You could add in nuts or dried fruits if you so desire.
**If you substitute the Olive Oil with Unsweetened Applesauce and also add Walnuts, the nutritional information changes to Calories: 132   Fat: 5g    Carbs:  23g   Protein: 4g

Chicken Broccoli Quinoa Casserole
2 cups Water
1 lb Chicken, cubed (Rotisserie is what I used)
3 cups Broccoli Florets
2 cups Low-Sodium Chicken Broth
1 cup Milk
1/2 cup Flour
1 cup Dry Quinoa
1/2 cup Shredded Cheese
Makes 4 servings
Calories: 338   Fat: 8g    Carbs:  48g   Protein: 22g
Mix all ingredients, except the cheese, in a large bowl.  Pour into a prepared 9x13 cake pan and bake at 400 for a total of about 45 minutes.  Check on casserole every 10 to 15 minutes and give it a stir so that the quinoa cooks evenly.  In the last 5 minutes, add the cheese to the top and cook until just bubbly.
*These are pretty generous portions so if you are serving with something else, this could yield 6-8 servings.

Diabetic Journal Week 7

Wednesday February 25, 2015
I made this awesome mix last night and had it for breakfast this morning.  I am not sure exactly what to call it.  It's like a cold salad but if you heat it up, it's like a casserole.  Seems like all the best foods don't photograph very nicely.  I know it looks like a pile of stuff but I promise, it is so yummy.



Chicken, Quinoa and Avocado Salad
1 cup dry Quinoa
2 Avocados, cubed
Juice of 1 Lime
2 cups Cherry or Grape Tomatoes, halved
1 1/2 cups low-fat Ricotta Cheese
1-1/2 cups boiled Chicken Breast, diced
Salt and Pepper to taste
Cook the Quinoa according to the package instructions and then spread on a plate and put in the refrigerator to cool.  After it is cooled completely, just mix all your ingredients together.  I let is sit over night and then heated up a serving for breakfast.  It was delicious and full of power foods.  It makes 4 heaping servings.  You could add it to some greens for even more nutritional value.
Each serving has 420 calories, 16 grams of fat, 42 carbs and 33 grams of protein.

While this journey is a very personal one and I am doing this strictly for myself and my health, all the support I have received from friends and family near and far has really kept me accountable.  Not only do I not want to disappoint myself, but I would hate to disappoint anyone else.  At times I may overshare but that is part of my charming personality.

Thursday February 26th, 2015:
I am a tad bit discouraged today.  I have hit a small plateau.  My weight hasn't changed at all in almost 2 weeks.  What this tells me is that it's time to put in some work.  The first 30 pounds came off fairly easily by just cutting out processed sugar and lowering my carb intake.  Now is the time to work on portion control and incorporating more exercise.  I had set a goal for myself to lose 50 lbs in 2015.  While that is a great goal, I think I need to set myself some smaller short-term goals that I can easily achieve.


So, for March, I am going to set one goal for myself each week.  Since the 1st is on Sunday, that will start my first week and my first goal.  I got the idea from the YouTube channel Mind Over Munch.  She has some great healthy recipes, workouts and home hacks.  She does an amazing trick with a Quest bar, making it into cereal.  I was sure it wouldn't work but it turned out so crunchy.  I bet you didn't realize that YouTube was more than cat videos.  There is actually a bevy of information on the site.  From recipes to workouts to tips and information on almost anything.

Friday February 27th, 2015:
My name is Kristy and I am an addict.  I am absolutely obsessed with food.  It is constantly on my mind.  I am always thinking about what my next meal will be or a new recipe to try or a way I can cut calories somewhere.  My biggest struggles are dinner.  Sometimes I get home and have no idea what I am going to make.  This leads to wanting to order in.  Pizza is one of my absolute favorite foods.  I haven't had it since January 1st.  Three days this week I came home without a plan for dinner.  All three days, I threw something together instead of ordering pizza.

This leads me to my first goal for the first week of March.  My goal for the week is to plan and make at least 5 of each meal.  Meaning 5 breakfasts, 5 lunches and 5 dinners.  Weekends are the hardest part but we have no plans for that weekend so it should be fairly easy.  Last night I made our first batch of Overnight Oats.  These will be great for breakfasts.  While the chocolate one was really nasty, the blueberry flavor was awesome.  I will share the recipe in my next blog so I can post a picture with it.

Sunday March 1st, 2015
After the small disappointment earlier in the week, the weekend was spent with friends at parties.  Friday night my sister and I went to a Passion party at a friend's house.  I brought a veggie tray because I wasn't sure what food would be there.  Our hostess, Hollie, had chocolate dipped fruit, fruit kabobs, large and small wienies and cheese dip. I ate mostly fruit and vegetables but had some of the wienies too.  I also didn't drink, which was weird for me but not really that difficult.

Saturday night I went to a birthday party for another friend where I also didn't drink.  I packed an apple and a tangerine with me and got a 10 piece McNugget on the drive up, around 3:30 pm. I wasn't hungry the rest of the night so I felt good about the decision.  They all had pizza in the lounge area and I didn't go with them because as I talked about earlier, it is my trigger food.  So much so that I am going to be trying cauliflower pizza crust this week.  I am crossing my fingers.
